lamb recipe pinoy BBQ Butterflied Lamb Recipe with Halloumi & Tomato Salad | Woolworths

A quick & easy lamb recipe with halloumi. A great BBQ recipe & classic Australian food that also makes a lamb burger recipe.

Prep: 15 mins | Cook: 40 mins | Serves: 8

Ingredients:
250g halloumi cheese, at room temperature
1kg lamb leg butterflied roast with rosemary garnish
2 tablespoons Woolworths Select Spanish mellow olive oil
1 tablespoon fresh thyme leaves, plus extra to serve
½ lemon, rind and juice
400g fresh tomato medley mix, halved
¾ cup whole Sicilian green olives, smashed and pitted
180g salad leaves
Dressing
¼ cup Woolworths Select Spanish mellow olive oil
1 tablespoon Woolworths Select red wine vinegar
1 teaspoon Woolworths Select Dijon mustard

Directions:
1. Thinly slice halloumi and place on a plate. Place lamb on a tray.
2. Combine oil, thyme and lemon in a small jug. Whisk with a fork, season. Pour 1 tablespoon over the sliced halloumi and remainder over the lamb.
3. Cook lamb on preheated barbecue grill or flat plate over medium heat; covered with a hood or upturned roasting pan, for 15 minutes, each side or until cooked to your liking. Transfer to a large tray, cover with foil and rest for 15 minutes while making the salad.
4. Meanwhile, for the dressing, combine olive oil, vinegar and mustard in a medium bowl. Add tomatoes and olives. Season.
5. Arrange salad leaves among plates, spoon over olives and tomatoes. Cook halloumi on heated barbecue flat plate for 1-2 minutes or until golden and tear over salad. Drizzle with any remaining dressing. Carve lamb on a board and serve with salad.

Tip 1: This salad is great served with barbecued eggplant slices for a vegetarian meal
Tip 2: For easy lamb burgers, serve the lamb sliced on toasted buns with lettuce, grilled halloumi and either aioli or tomato sauce
Tip 3: This can also be a great when you need to take a plate to share. Pre-cook and chill the lamb, served sliced cold lamb over salad on a large sharing platter, add salad dressing just before serving.
